Did you know that turkey is one of the most protein-rich meats? It’s also low in saturated fat — a great combination if you ask us!

Homemade meatballs are a great to always have on hand. You can make them in batches and freeze them to keep. Turkey meatballs are incredibly versatile; they’re perfect to grab when prepping an easy, quick dinner or just to have for a quick snack.

Ingredients:
1 lb of ground turkey breast
1/4 cup of chopped onions
1 tablespoon of chopped garlic
1/4 cup of nutritional yeast (or cheese of choice)
1 teaspoon Coconut Amino Acids (Braggs Amino Acids or Worcestershire sauce)
Salt and seasonings to taste
Directions:
Preheat oven to 350-degrees
Combine all ingredients into a large bowl and mix well.
Mold into small one-inch balls and place onto a baking sheet lined with parchment paper
Bake for 30-40 minutes depending on size
Freeze or save away for easy meal prep!

Different Meal Variations:

Soup

Additional ingredients: Olive Oil, Salt/Pepper, Onion, Garlic, Chicken Stock, 1 can of white beans, fresh greens and whole-wheat pasta

Heat the olive oil in a medium saucepan over medium heat. Add the onion and garlic and saute until translucent, about 4-5 minutes, stirring to prevent them from burning. Reduce the heat to low and add the thyme and red pepper flakes. Add the peas or beans and cook over low heat for 10 minutes, stirring occasionally. Add the greens (spinach, kale or blend) and stock and bring to a simmer. Add the fresh pasta and cook over low heat until tender, 2 to 3 minutes (if using pre-cooked noodles, cook just long enough to heat through). Place the meatballs in the saucepan and cook until heated through, another 1-2 minutes. Adjust the seasoning with salt, and serve, garnished with the parsley leaves.

Meatball Lettuce Wraps

Additional Ingredients: 1/2 cup mayonnaise, 1 tablespoon Sriracha or another hot pepper sauce (such as Tabasco), 1 tablespoon fresh lime juice, 1 lettuce head, split 1 carrot, shredded 1/2 cup fresh cilantro sprigs and 2 radishes, thinly sliced

Mix together the mayonnaise, Sriracha, and lime juice. Spread on the lettuce halves and top with the meatballs, carrot, cilantro, and radishes. Cut into 4 sandwiches.

Meatball Pizza

Additional ingredients: Ezekiel 4:6 Sprouted Grain Wrap, Sauce of Choice (marinara or pesto), low fat cheese, toppings of choice

Preheat oven 400F degrees and place wrap on ungreased pizza pan. Spread 1 cup sauce over crust and sprinkle on1 cup cheese. in small bowl toss meatballs with remaining sauce, then put on crust. Sprinkle the rest with rest of cheese, then italian seasoning and bake until cheese is melted and bubbly about 20 minutes.

Zoodles

Additional Ingredients: 1 tablespoons extra virgin olive oil, 1/4 cup onion, diced; 3 cloves garlic, minced, 3 (8 oz each) zucchinis, cut into long julienne strips (with a mandolin or spiralizer)

Heat a large nonstick skillet over medium heat. When hot add the oil, onions and garlic and cook until fragrant, about 1 to 2 minutes. Increase heat to medium-high and add the zucchini, season with salt and pepper to taste and cook about 1 minute. Give it a stir to mix everything around and cook another 1 to 1-1/2 minutes, or until the vegetables are cooked through yet firm. Divide the zucchini between 3 bowls and top with 4 meatballs and sauce, add some grated cheese and enjoy!
